About the Recipe
I had never had this before until I moved to Italy. I have since had it twice and made it a further twice. It is a beautiful combination of sweet, savoury and sour, fresh citrus from the orange, combined usually with fennel and potentially some pomegranate that makes for a lovely refreshing salad.

Ingredients
3-4 medium sized oranges
1/2 pomegranate
Pinch of salt
Pinch of pepper
Olive oil
Thinly sliced fennel (or washed onion in my case: If using onion use about 1/2 an onion; if fennel use a whole fennel; both thinly sliced)
Your favourite herbs: I included oregano and basil but you could include mint too or parsley, etc.
Preparation
Prepare the orange: this is the most difficult part of the process. Peel the orange and then make cuts just inside of the segment lines. Then join this cut to the other side of the segment and it should cut out each segment neatly.
Then just toss your ingredients together with salt and olive oil and it makes the most delicious and refreshing salad out there.
