Leek cream and bacon pasta

About the Recipe

This is one of those week-night budget dishes that come together very quickly and makes the most of bacon in order to make a very filling and full bodied dish.

Ingredients

1 packet of bacon (as many as you want per person baked in the oven and around 4-6 rashers chopped into matchsticks for the sauce)

2 leeks, prepped: cut from just below where it turns green in the centre of the leek all the way to the top; turn 90° and do the same. Then wash to remove all the dirt that might be stuck between the layers. Remove the ends then roughly chop.

300ml cream

Salt, pepper and garlic

Optional: chilli/some kind of spice

Preparation

  1. Place the oven bacon in the oven at 180C and start boiling your pasta whilst you prep the rest of the ingredients.

  2. Add the cut bacon to a pan and fry for around 2 mins before adding the leeks. Give the leeks around 1 min before adding the garlic and chilli/chilli flakes.

  3. Once the leeks are soft, add the cream and lightly scrape the bottom of the pan with a wooden/silicone tool to prevent damaging the surface. Season to taste.

  4. Add your pasta to the pan just before being cooked and finish them off there, once cooked you're ready to serve!
