About the Recipe

This is a relatively easy and customisable way of preserving fruit for slightly longer than if kept fresh which can be done with a variety of fruit including - but not limited to - pears, plums, peaches, apples, etc.

Ingredients

1 packet of pears (usually around 6)

2 star anise

Tablespoon of cinnamon

50g sugar

10g ginger (roughly cut, does not need to be peeled but if keeping the peel, wash)

Teaspoon of nutmeg

Preparation

  1. Prep the pears: peel and half the pears

  2. Prep the syrup: combine all of the ingredients besides the pears with 500ml water

  3. Boil the pears: boil for around 40 minutes, or until a knife passes through the pears with relative ease. Leave to cool in the pot for around an hour

  4. Reduce: remove the pears and store in an airtight container then boil the remaining liquid until syrup consistency.

  5. To serve: pour a little bit of the syrup on the pears and enjoy with a variety of other recipes such as panna cotta, porridge, pancakes, etc.
