About the Recipe

This is another dish that you can customise to your preferences or requirements as you see fit.

Ingredients

1 portion of noodles per person

3 eggs

1-2 portions of protein of your choice (anything from chicken, beef, tofu, etc)

Vegetables of your choice (pick and choose, whatever in season works too. Examples include carrots, beansprouts, spinach, broccoli...)

Sesame seeds

Spring onions

Ginger and garlic (finely sliced/grated/minced)

1 onion sliced

Chilli (quantity and prep up to you. If you like it spicy, include around 4-5 chillis finely sliced with the seeds. If you want something more mild, maybe do around 3 chillis without seeds)

1 tablespoon sesame oil


For the sauce

1 tablespoon both light and dark soy sauce

Pinch of sugar or teaspoon of honey

1 tablespoon ketchup

1 tablespoon oyster sauce

1 teaspoon fish sauce


Preparation

  1. Mix all your sauce together. If you're using meat, cover your meat in the sauce whilst you prep the rest of the ingredients.

  2. Prepare your noodles according to package instructions (if you're using udon for instance, it's usually just a case of putting them in a bowl of boiling water and loosening them)

  3. Fry your meat/protein for a couple of minutes until it cooks on the outside slightly.

  4. Remove your protein and add your onion then fry for a few minutes before adding your garlic, ginger and chilli.

  5. Return your protein and add your vegetables. Allow the vegetables to soften slightly and then add your noodles and sauce. Ensure everything is well combined then serve with a sprinkling of spring onions and sesame seeds.
