About the Recipe
This is another one of those dishes from my childhood. My mum would usually put pork or tuna in this dish (the canned variety not fresh as that would be a waste). I think any protein of your fancy can work although I do recommend sticking to some variety of pork as a starting point and if you like you can change to tuna.

Ingredients
1 tablespoon of both light & dark soy sauce
1 tablespoon sesame oil
1 box of spam (between 300-400g total)
1 tablespoon oyster sauce
1 tablespoon fish sauce
1 tablespoon ketchup
200g Kimchi, roughly chopped
1 tablespoon neutral oil (vegetable/sunflower...)
2 cups rice (ideally cooked and dehydrated)
200g carrots - diced or roughly chopped depending on personal preference
1 head of broccoli
200g beansprouts
2-3 spring onions
2 eggs
1 onion, thinly sliced
3 cloves garlic, roughly chopped/minced/grated
Preparation
Make the sauce: Combine the ketchup, oyster sauce, soy sauces, salt and fish sauce
Royal-ify the rice: whisk 2 eggs in a seperate bowl and pour over the rice and mix in such that most rice grains become slightly yellow
Fry the spam: remove the spam from the container and dice. Then fry until with the onion until the spam is golden brown
Add kimchi: add kimchi, garlic and spring onions to the frying pan
Fry rice: remove the kimchi-spring-onion-spam mixture and fry the rice with a little bit of oil seperately.
Add remaining vegetables: add remaining vegetables. Beansprouts go in last around 2 minutes before serving.
Add the sauce: pour the sauce over the dish and gently toss to combine.
