About the Recipe
This is a side dish to a bowl of rice I used to have all the time growing up which is an easy way of using large quantities of beef.
The beef is marinaded with eggs and carrots for a delicious dish which you usually tear with your fingers before serving up – it is that tender.

Ingredients
1 small onion or 1/2 a large onion (thinly sliced)
1 spring onion sliced
400g thinly sliced beef (I tried making it with diced beef. It was ok but I can see why thinly sliced beef is better; if you want to slice your beef yourself I recommend freezing it slightly or freezing it completely and thawing for an hour)
Dashi (if you don't have any you can get away with using just water)
2 tablespoons mirin (if you don't have any just add a teaspoon of sugar/honey to your dish when cooking)
3 tablespoons light soy sauce (you are not looking for the colour of dark soy so don't use it)
Preparation
In a cold pot/large pan add all your liquid ingredients then add the onions and beef.
