About the Recipe

This is a dish that I make a lot of. Almost every 2 weeks (though that is not that often, bearing in mind I try and make new dishes as much as I can, it is quite frequent).
It is also really easy to make. The only requirement is that you ensure the rice is pre-cooked rice that is from the night before as this will allow it to properly absorb all the flavours and give it the texture you are looking for.

Ingredients

1 portion of rice (you want to either used leftover rice or rice you have left dehydrate in the fridge overnight for this purpose to have the best results)

4 eggs (optionally, seperate the whites and yolks. You can then coat the rice in the yolks to give it a yellow hue to 'royalify' it)

1-2 portions of protein of your choice (anything from chicken, beef, tofu, etc)

Vegetables of your choice (pick and choose, whatever in season works too. Examples include carrots, beansprouts, spinach, broccoli...)

Sesame seeds

Spring onions

Ginger and garlic (finely sliced/grated/minced)

1 onion sliced

Chilli (quantity and prep up to you. If you like it spicy, include around 4-5 chillis finely sliced with the seeds. If you want something more mild, maybe do around 3 chillis without seeds)

1 tablespoon sesame oil


For the sauce

1 tablespoon both light and dark soy sauce

Pinch of sugar or teaspoon of honey

1 tablespoon ketchup

1 tablespoon oyster sauce

1 teaspoon fish sauce



Preparation

  1. Mix all your sauce together. If you're using meat, cover your meat in the sauce whilst you prep the rest of the ingredients.

  2. If you want to royalify your rice, mix the egg yolks into your rice.

  3. Fry your meat/protein for a couple of minutes until it cooks on the outside slightly.

  4. Remove your protein and add your onion then fry for a few minutes before adding your garlic, ginger and chilli.

  5. I like to then remove those ingredients, add a little more oil (including some sesame oil) and add my rice. This I then leave for a few minutes until the rice develops a little crunch. This means that when you eat it it will be heterogeneious which makes for a better eating experience. If you have not royalifyed your rice, add your eggs at this point by pushing the rice to one side then adding the eggs (pre beaten) and scraping along the bottom as it cooks (this will create the strands of egg characteristic of this dish).

  6. Once you've fried your rice to your desired liking, reintroduce your protein and the aromatics and add your vegetables (do this with common sense eg if your spinach is frozen, defrost it; if your broccoli is really thick, cut it smaller and blanch it; etc)

  7. To serve simply sprinkle some spring onions and sesame seeds.
